Lots of chicken this week, since I’m roasting a chicken on Tuesday. This will also simplify my cooking, which I totally need. I’ll fill in recipes for the Tortilla Soup and Tangerine Chicken later this week.
Monday: Tacos, pinto beans, Mexican rice
Tuesday: Roasted chicken, green beans (from freezer), quinoa pilaf
Wednesday: Chicken Tortilla Soup
Thursday: DIY Pizza
Friday: Tangerine Chicken on Basmati rice or millet
Saturday: Black-Eyed Pea Soup
Sunday: Burgers and sweet potato fries
