This is the last week that it will just be the three of us (husband in South Carolina for the weekend), so I didn’t plan anything too exciting…lots of chicken, though.
Monday: Chicken Couscous Salad (from an old Cooking Light Magazine — no dairy), Apples and Celery with Gruyere (from Vegetarian Cooking for Everyone — no meat, cheese can be left out of part of it)
Tuesday: DIY, leftovers
Wednesday: Eating out with friends who are visiting from Cali!
Thursday: Fried chicken (substituting unflavored soy milk), mashed potatoes, braised carrots (comfort food for my husband’s busy week!)
Saturday: Bean tostadas
Sunday: Toasted chicken salad sandwiches with fries
